Smoked salmon, crab and zucchini casserole

Just because this crab casserole lacks carbs and a whole lot of fat it doesn’t mean it sucks. Trust me, and the mock speed this meal gets gobbled up, it’s tasty and worthy of your dinner table. I made this as a main event but you can use it as a side to any protein, it goes well with everything.

I have recently put my whole household on a diet. If you are the only one who grocery shops and prepares all the meals, this is an easy task to accomplish. So for the next two weeks (or so) we are going carb free.

Using low-fat cheese and having no carbohydrates, this casserole is perfect for any weight loss diet including the South Beach diet, the Zone and Atkins.

It’s squash season. Of all the squashes, zucchini is my favorite. I use it in soups and chowders. I fry it with butter. I grill it with oil. It just tastes good no matter how you cook it. The mild flavor compliments seafood (in particular crab meat) perfectly.

For this recipe I added a little smoked salmon to bring a rich flavor out of the feta. It worked without over powering the crab although the casserole is just as good without the salmon.

 

Ingredients:

  • 6-7 zucchini sliced
  • 2 Tablespoons olive oil
  • 4 cloves of garlic minced
  • 1 ½ Tablespoons of Thyme
  • 1 lb. or 2 cans of Jumbo lumb blue crab meat
  • Pepper
  • 1 cup smoked salmon (flaked)
  • 1 ½ cups low fat feta
  • ¾ cups of parmesan
  • 4 large eggs (beaten)

 

Method to the Rad-ness:

Preheat the oven to 375*

In a large frying pan (wok), fry the zucchini in the olive oil, garlic and thyme. (I fry the zucchini in two batches dividing the garlic and thyme evenly). Cook for about 4-5 minutes until the zucchini is starting to soften.

In a large casserole baking dish, layer half of the squash on the bottom. Add half of the crab meat, smoked salmon, feta and parmesan. Sprinkle with pepper and add half of the beaten eggs.

Layer the rest of the squash repeating the process as above.

Pop it in the oven for 40-45 minutes or until the squash is tender.

  • Pepper
