Crab Stew Recipe

A cooler full of fresh caught Dungeness

Sometimes I make something that is so tasty that I have to run out and immediate share it with the world.

This is one of those tasties and here is me sharing it with the world.

I promise you that once you make this awesome stew, you will have no choice but to pat yourself on the back (or where ever you choose)  for a job well done.

This is yet another one of my healthy recipes.  But don’t worry, you would never be able to tell by tasting this that it’s NOT bad for you. There are very little carbs and  barely any fat, which makes its low in calories. This will satisfy anybodies craving for comfort food.

Yep! You heard me right…it’s a comfort food…and it’s low in the calories department. These kinds of foods are hard to come by. 

I’ve been going on about this meal being healthy and yummy tasting that I haven’t been able to get the the best part. It’s a time saver!

This stew can be made in a slow cooker. Just plop the ingredients in and your good to go.

You could cook this on the stove top if you didn’t get a slow cooker for Christmas like I did.

What?! You don’t have a slow cooker? You best be buying yourself one here!

 

Ingredients:

  • 3 butternut squash, peeled, seeded and chopped into 1/2 inch pieces
  • 4 cups of chicken broth
  • 1 Tablespoon of olive oil
  • 1 Medium onion (chopped)
  • 4 Cloves of garlic (minced)
  • 1 teaspoon  of oregano
  • 1 Can of diced tomatoes
  • 1/2 Cup of quinoa
  • 1/4 Cup of fresh cilantro (minced)
  • 1 pound of pasteurized claw crab meat

 

Method to the Rad-ness:

For cooking on a stove top:

In a large pot on medium high heat add the squash and chicken broth.

While that is heating up to a low boil, saute the onions in a skillet with the olive oil over medium heat. Cook until the onions have become translucent and then add them to the chicken broth.

Add the garlic, oregano, tomatoes and quinoa. Reduce heat to low-medium and let simmer for 40 minutes. Remove from heat and add the cilantro and crab meat.

For cooking in a crock pot:

Add all the ingredients EXCEPT the cilantro and crab meat. Turn your crock pot on for 5 hours (6 hours is okay) on low medium heat.

When you are ready to serve stir in the cilantro and crab meat.
