 Mushrooms filled with crab stuffing

What food makes you gag? Seriously. Like a “I just barfed in my mouth a little bit” kind of gag reflex the second your taste buds are hit.

Mine are mushrooms, or white mushrooms in particular. I can handle, even like, some wild mushrooms but white mushrooms gross me out. I tried to “acquire” a taste for them but it’s just not happening.

The pungent smell, texture and taste all send an instant signal to my brain that the mushroom may be poison and you must use every means possible to eradicate them. “Sear it with hot vomit,” says my stomach. The poor wee mushroom doesn’t stand a chance.

Its been awhile since I’ve tested my gag reflex and thought I would give these a try. I have only heard raving reviews from everybody who eats them.

Let me just say this; money’s mushrooms DO NOT make meals marvelous. Not if you have the same taste buds as me. I would love to give this recipe a raving review but I can’t.

I can, however, let you know that these mushrooms didn’t go to waste. Quite the opposite.

Within fifteen minutes of taking these out of the oven they were gone. As in burning-the-roof-of-their-mouth-so-good-they-don’t-care. Davis and Ceedrus liked them -really liked them.

Everyone has their own taste. If you are one of those people who like mushrooms then this recipe is for you. Try it out and let me know what you think.

 

P.S. I made a small batch but this recipe can easily be doubled.

 

Ingredients:

  • 12 Medium sized mushrooms (pick ones that would be good for stuffing)
  • 1/2 (4 oz.) a package of cream cheese
  • 1/2 cup of crab meat (I used imitation)
  • 2 garlic cloves minced
  • 1/2  teaspoon of cayenne pepper (optional)
  • salt and pepper
  • Twelve slices of smoked white cheddar

 

Method to the Rad-ness:

Preheat the oven to 350*.

Break the stems off of all the mushrooms by simply popping them off and arrange them onto a baking sheet.

In a small mixing bowl add the cream cheese, crab meat, garlic, cayenne, salt and pepper. Stir together well.

Scoop a heaping spoonful of the crab mixture into the mushroom caps until the entire bowl is divided evenly.

Put the baking sheet in the oven for 10 minutes. Remove the mushrooms from the oven and set your oven to broil.

Carefully put the slices of white cheddar on top of each mushroom on broil  in the middle rack for an additional 2 minutes.
