Arugula and advocodao dungeness crab salad

The best thing about this arugula, avocado and Dungeness crab salad recipe is you can eat well and feel good about yourself. It’s a confidence booster for insecure bellies.

If you only have a few minutes for lunch this is a quick fix with a bit of tang.

The zesty flavors of arugula spark the sweetness of the crab meat. The avocado offers some mild flavors and soft textures while the lemon/mustard dressing keeps your taste buds thoroughly satisfied.

Pine nuts work really well with this salad. I highly recommend them. I just happened to be fresh out of pine nuts when I made this salad for lunch.

*We, at how-tocrab.com, recommend you use Dungeness crab for this salad however, fresh blue crab works almost as well. Also try Alaska king crab legs or Snow crab legs.

Ingredients:

  • 2 ripe avocados
  • 3 cups Arugula
  • 1/2 cup grape tomatoes halved
  • 1/2 dungeness crab shelled and picked or you can use canned crab meat
  • a hand full of toasted pine nuts (optional)

 

Method to the Rad-ness:

In a medium bowl mix all the ingredients up, except the crab meat. Spread evenly on plates and sprinkle with the crab chunks on top, being careful not to break apart the crab.

 

For the Dressing:

  • 1/4 cup of extra-virgin olive oil
  • 4 Tbs. of freshly squeezed lemon juice (3 lemons)
  • 1 tsp prepared Dijon mustard
  • 1 clove of garlic minced
  • 1/2 tsp of sea salt

 

Method to the Rad-ness:

In a small bowl add the lemon juice, mustard, garlic and salt. Whisk the ingredients together while slowly adding the olive oil.

Drizzle evenly over the plate full of salad.
