Eat this imitation crab salad to kick start your summer off right with healthy good feelings all around.

If you have been up in the gym -working on your fitness then you’re feeling pretty good about things. Your energy is amped up, your waistline is trimmed and your skin is glowing. Everything is coming up roses -underneath rainbows with unicorns prancing off in the distance.

I present to you a super-delicious, protein-packed, diversifiable (it is SO a word -screw you spell check!) salad that will leave you in the negative calories -well almost negative calories.

Substitute out the mayonaise for non-fat Greek yogurt you won’t even notice the difference I promise. Greek yogurt is the bomb! I needn’t say more about greek yogurt but I will because we’re all trying to be as healthy as can be here. Compared to mayonnaise, regular yogurt and sour cream -Greek yogurt has twice as much protein and a ton less sugar. More protein + less sugar = more muscle + less fat. You’re welcome for that fact!

The diversifiable (watch it spell check) part comes into play when you add what you like. Any fruit or veggies that tickle your fancy. I like to add apples and celery for a crunch and halved grapes for some sweetness. You can also eat this right out of a bowl, or in a sandwich, on crackers or share it across the street with Mr. Mackers. You can eat this here or there. This salad goes well anywhere.

Ingredients:

  • 1 cup of chopped imitation crab
  • 3/4 cup of mayonnaise or (for a healthy alternative) non-fat Greek yogurt
  • 1 Tablespoon of fresh dill chopped fine
  • 2 cloves of garlic minced
  • 1/4 of a long english cucumber grated and strained
  • 1 celery stock chopped
  • Any crunchy fruit or veggie of your choice.

 

Method to the Rad-ness:

In a medium bowl add the crab, mayonnaise, dill, garlic, cucumber, celery and anything else you might like to thrown in. Mix together and chill or serve.
