Low Carb Crab Cake Recipe

Crab meat is one of the best sources of protein you can add to your diet. And we all know that having a high protein diet helps to build super-muscles.

Having some super-muscles will come in handy when you’re fighting with a ferocious beast that wants you to be their high protein diet.

So, by eating crab meat you will be able to fight off panthers or angry honey badgers.

This recipe is lightly brushed with olive oil, then, baked-broiled to avoid adding any extra bad fats in the frying process. (Olive oil is the good fats) If you prefer to grill it, I would suggest using a grilling pan as the cakes can easily fall apart if they are handled too much when cooking.

We’ve also added extra health benefits by using extra protein in the shape of eggs and minced scallops as a binding agent. The scallop compliments the crab with its subtle flavor and the egg holds everything together into a perfect package. Shape these crab cakes into a log and call them a protein bar if you like!

I first learned about using scallops as a binder when I was reading up on the Vancouver Olympics. They served authentic West coast crab cakes created by a local chef (who I don’t know the name of) at a special dinner. I never did get the recipe but I was able to create my own rendition of this crab cake.

 

Ingredients:

  • 1/2 lb. Scallops
  • Fresh crab meat from two Dungeness (about 1 ½ lbs.)or Jumbo lumb blue crab meat
  • 2 eggs, beaten
  • 1 green onion minced
  • 1/4 red bell pepper, minced
  • 1 Tablespoon of fresh Dill minced
  • 1 Tablespoon lemon juice
  • 1 garlic minced
  • 1 Tablespoon minced parsley
  • Salt and freshly ground pepper to taste
  • Olive oil

 

Method to the Rad-ness:

In a blender mince the scallops and egg. Add the mixture to a bowl and add the green onion, red pepper, dill, lemon juice, garlic and parsley. Mix well.

Gently fold in the crab meat. Add salt and pepper to taste.

The scallops and egg will bond the ingredients, but they will need to be handled with care. Divide the mixture into eight equal parts. Form into crab cakes and lightly brush either side with olive oil. Place them on a baking sheet and refrigerate for 30 minutes.

Put the oven rack in the middle of your oven.

Preheat oven to 375* F. Once the oven has reached temperature, turn the oven to broil and put the baking sheet on the middle rack.

Bake for 6 minutes.
