A steaming bowl of crab mac and cheese

As far as rich and creamy gooey melty goodness goes there’s nothing that compares to this reicpe…nothing. If your comfort food is the boxed variety of mac and cheese then I’m sorry to tell you, but once you make this homemade glorious goodness you will never be able to go back to the box. Consider yourself warned.

This mac and cheese is filled with delicate flavors of pure cheesy-ness topped with one of life’s greatest gifts from the sea -crab meat. Mixing the crab and cheese together is something I do often when I’m making crab dip but this is better because its a whole meal in one pot.

The best part about this recipe is you don’t have to be rich to make it! I will often substitute imitation crab meat (like I did tonight) instead of the real deal without sacrificing the deliciousness.

Did I mention, yet, that this is dead simple and can be made in a hurry…

 

Ingredients:

  • 2 Cups of macaroni noodles
  • 1 8 oz. package of no-fat cream cheese
  • 2 Tablespoons of heavy cream
  • 1 cup low-fat sharp white cheddar
  • 1 Tablespoon of Parmesean
  • 1 teaspoon of olive oil
  • 3 chopped scallions
  • 1 cup of crab meat (or imitation crab chopped)
  • green onions for garnish

 

Method to the Rad-ness:

In a medium pot, boil salted water and add the macaroni. Cook until soft.

Preheat your oven to 375 degrees.

In a medium sauce pan add the olive oil and scallions and cook on medium-high heat until fragrant (about 1-2 minutes). Reduce heat to medium-low and add the cream cheese and cream. Heat until the cheese is melted. Remove from heat and add the cheddar cheese, Parmesean and crab meat.

Drain the macaroni and put the noodles into a small casserole dish. Pour the cheesy mixture over the noodles and stir slightly until all the noodles are covered.

Bake for 10-15 minutes until the sauce starts to bubble. Garnish with green onion.
